About Barberries

Barberries (Berberis vulgaris) are tiny dried berries that pack an intense sour punch. Iran is the world's largest producer, and zereshk (barberries) are integral to Persian cuisine — no wedding or celebration is complete without zereshk polo.

Characteristics

  • Size: Very small, about 5-8mm
  • Color: Deep red to burgundy when dried
  • Texture: Slightly sticky, chewy

Preparation

Cleaning

Barberries often contain small stems and debris:

  1. Spread on a plate
  2. Pick through to remove stems
  3. Rinse briefly in cold water
  4. Drain well and pat dry

Cooking

Never add raw to dishes — always sauté first:

  1. Melt butter in a pan
  2. Add cleaned barberries
  3. Sauté 2-3 minutes until plump
  4. Add sugar to balance tartness (1-2 tablespoons per cup)
  5. Use immediately

Common Uses

Zereshk Polo

The classic — saffron rice topped with sweet-tart barberries, often served with chicken.

As Garnish

Scattered over rice dishes, adding color and bursts of flavor.

In Stuffings

Mixed into chicken or vegetable stuffings.

Tips

  • Don't overcook: They burn easily and become bitter
  • Balance with sugar: Their tartness needs sweetening
  • Store properly: Keep refrigerated after opening

Storage

Refrigerate in airtight container for up to 6 months. Can freeze for longer storage. Check for moisture before storing — should be dry.
